Gingerbread Spice Kiss Cookies combine my two favorite Christmas cookies, gingerbread and chocolate kiss cookies. Warning, these cookies are highly addictive. They are packed with gingerbread flavor so they are a little spicy yet they have a soft and pillowy texture to them. These cookies are sure to please at your holiday gathering this weekend.
OMG you guys, Gingerbread Spice Kiss Cookies are legit amazing. I don’t fancy myself a baker but I couldn’t let December go by without making some cookies. I was going to make gingerbread cookies and decorate them to look like Kieran and me, but I ran out of time. Wouldn’t that be funny to show up t0 family gatherings with cookies decorated to look like yourself? I’m severely lacking in the cookie decoration department so I laugh at the mere thought of what a Kieran or Christina cookie would look like. #hotmess
Moving on, I decided to combine my love of gingerbread and chocolate and make Gingerbread Spice Kiss Cookies this year. Ginger and chocolate go together like cookies and cream, Cheech and Chong, and our bought government and crony capitalism. I made Chewy Chocolate Gingersnap Cookies a few years ago and non-dairy Gluten-Free Triple Chocolate Ginger Cookies that were to die for.
Huh, it literally just dawned on me that almost every cookie recipe I’ve made was with chocolate and ginger. Well damn, I should broaden my horizons and make something different next time. Moving on…
You guys, I have something very important to tell you. If you’ve been a frequent reader of this blog you know that cookie dough is my Achilles heel, my kryptonite, my weakness. If cookie dough is anywhere in the proximity I will eat it. But Christina, raw cookie dough is horrible for you! You could get salmonella!
I’m a 40-year-old woman who has eaten cookie dough since childhood. I stopped fearing salmonella a long time ago. Actually, at this point I’m convinced I’ve been eating cookie dough so long I’ve built up an immunity to it. That’s a thing, right? Watch, I just jinxed the F out of myself so now I’ll probably get double the salmonella poisoning. #worththerisk

I MADE THESE COOKIES AND RESISTED EATING THE DOUGH.
I know, I know, who am I anymore?
Alright, I’ll stop lying, I did eat some of the dough, but only one cookie’s worth. I’m not lying when I say that’s a big deal for me. Normally when I make cookies the recipe renders 8 cookies or something ridiculously small like that. My Gingerbread Spice Kiss Cookies recipe rendered 19. 19! That’s a new record!
The next time we see each other I would appreciate a pat on the back. My cookie dough addiction is the real deal folks, it’s sort of a miracle I refrained myself this time around 😉
Real talk- it’s hard to photograph these cookies without making them look like boobs. I had a few overhead shots that were titillating but decided not to use them. However, I kept the image below because it was the breast one.
OK, enough horsing around, let me tell you about these cookies. They have an incredibly soft and pillowy texture that’s addicting AF. The gingerbread flavors throughout the cookie pack a tasty wallop. One bite of these Gingerbread Spice Kiss Cookies and you’ll be hooked.
I made a few batches of these cookies, varying the ingredients a little, to find my favorite recipe. I’m not going to lie, I had a really hard time picking my favorite because all the cookies turned out fantastic! Kieran’s pick was on the fence too. My neighbor tried the cookies and even he struggled to tell me which one he liked best. I guess you really can’t go wrong when you bake butter, flour, sugar, and eggs together. Unless of course, you overbake the cookie. Don’t overbake cookies.
Ultimately I decided to share this version of my Gingerbread Spice Kiss Cookies because I love how prominent the gingerbread flavors turned out. I mean, I love me some gingerbread ANYTHING this time of year. Who am I kidding, I love ginger any time of year. I’m making sauteed spinach as a side dish for dinner this week and guess which ingredient I’m including? You guessed it, ginger. I love it’s spicy goodness, so much!
And can we all take a minute to wonder why I didn’t include some booze in this cookie? I mean, 4 out of the last 6 recipes I’ve made included either vodka or rum. I’m kinda surprised I didn’t find a way to sneak it in. Maybe this is a sign I’m growing up? Bwahahahahahahahahahahahahahahahaha… cough.
Alrighty, folks, that’s a wrap on my Gingerbread Spice Kiss Cookies. I’m hoping to pump out a couple more recipes before Christmas, so fingers crossed I can make that happen. Kieran and I are flying to my hometown this coming Friday and come home next Tuesday. I’ll be working on the Munch as much as I can before we fly out. Once I’m home I’ll be focused on spending as much time as possible with my family and friends.

- 2 1/2 cups flour
- 1 1/2 teaspoon ground ginger
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon of salt
- 1 teaspoon of baking soda
- 10 tablespoons of butter softened
- 3/4 cups dark brown sugar packed (you can use light brown sugar too)
- 1 egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1/4 cup white sugar + 1 teaspoon of ground cinnamon
- 19 Hershey's kisses unwrapped
Ingredients

- Preheat the oven to 350 degrees. Line two cookie sheets with parchment paper or baking mats.
- Mix together the 1/4 cup sugar and 1 teaspoon of ground cinnamon in a small bowl. Set aside.
- Whisk together the flour, ginger, cinnamon, nutmeg, salt, and baking soda in a large bowl. Set aside.
- Using a standing mixer or electric mixer, cream the butter and sugar together until the mixture looks light and fluffy. Approx 3-5 minutes.
- Add the egg, molasses, and vanilla and mix until all ingredients are well combined. Approx another 2-3 minutes.
- Add half of the dry ingredients into the wet. Mix until the flour is almost fully incorporated, then add the remaining half. Scrape down the bowl to ensure the flour is fully incorporated into the cookie dough. Once the cookie dough fully comes together, stop mixing.
- Using a tablespoon, scope out a rounded tablespoon of dough and roll it into a ball between your palms. Drop the ball of dough into the cinnamon sugar mixture and evenly coat the dough with the sugar.
- The dough doesn't spread too far so it's OK to have 8-9 dough balls on one cookie sheet.
- Transfer the cookie sheets to the oven and bake for 9 minutes.
- Remove the cookies from the oven but leave them on the cookie sheet. Quickly push one Hersey's Kiss into each cookie.
- Let the cookies rest on the cookie sheet until completely cool. The chocolate kisses will begin to soften on the hot cookie. Once they are cool and hard, you can store the cookies in an airtight container.
- Enjoy!
