Gingerbread Spice Kiss Cookies
Gingerbread Spice Kiss Cookies combine my two favorite Christmas cookies, gingerbread and chocolate kiss cookies. Warning, these cookies are highly addictive. They are packed with gingerbread flavor so they are a little spicy yet they have a soft and pillowy texture to them. These cookies are sure to please at your holiday gathering this weekend.

  1. Preheat the oven to 350 degrees. Line two cookie sheets with parchment paper or baking mats.
  2. Mix together the 1/4 cup sugar and 1 teaspoon of ground cinnamon in a small bowl. Set aside.
  3. Whisk together the flour, ginger, cinnamon, nutmeg, salt, and baking soda in a large bowl. Set aside.
  4. Using a standing mixer or electric mixer, cream the butter and sugar together until the mixture looks light and fluffy. Approx 3-5 minutes.
  5. Add the egg, molasses, and vanilla and mix until all ingredients are well combined. Approx another 2-3 minutes.
  6. Add half of the dry ingredients into the wet. Mix until the flour is almost fully incorporated, then add the remaining half. Scrape down the bowl to ensure the flour is fully incorporated into the cookie dough. Once the cookie dough fully comes together, stop mixing.
  7. Using a tablespoon, scope out a rounded tablespoon of dough and roll it into a ball between your palms. Drop the ball of dough into the cinnamon sugar mixture and evenly coat the dough with the sugar.
  8. The dough doesn’t spread too far so it’s OK to have 8-9 dough balls on one cookie sheet.
  9. Transfer the cookie sheets to the oven and bake for 9 minutes.
  10. Remove the cookies from the oven but leave them on the cookie sheet. Quickly push one Hersey’s Kiss into each cookie.
  11. Let the cookies rest on the cookie sheet until completely cool. The chocolate kisses will begin to soften on the hot cookie. Once they are cool and hard, you can store the cookies in an airtight container.
