Tortellini with Roasted Tomato Vodka Sauce

Tortellini with Roasted Tomato Vodka Sauce is an easy foolproof recipe that’s perfect for the weekday or weeknight meals. The vodka sauce is a delicious combination of roasted tomato, onion, and garlic.  I added bacon to the sauce because bacon. Top off the meal with burrata cheese and you have an outstanding recipe that’s sure to please!

If you love roasted tomatoes, tortellini, vodka, cheese, and bacon, you are going to love this recipe. Tortellini with Roasted Tomato Vodka Sauce is a creamy sensation that will drive your taste buds wild.

I adapted this recipe from my Roasted Heirloom Tomato Soup with Burrata Basil Croutons post because I love that recipe so freaking much. I thought, how can I make this soup taste better? Then it hit me, I know! Turn the soup into pasta then add bacon and vodka!  I read there are flavors in tomatoes that don’t dissolve well in water but do in alcohol. The vodka enhances the flavor of the sauce by dispersing these flavonoids.

True confession time – I’m not entirely sure if the above is true, but I couldn’t wait to use the word flavonoid in a sentence. Hahahaha, flavonoid is a funny sounding word. It reminds me of Domino’s pizza noid. Remember Avoid the Noid? I loved that commercial when I was little.

All I know is tomato vodka sauce is out of this world, so I was excited to get Shock Munchy with it and create my own recipe.


I ate the Tortellini with Roasted Tomato Vodka Sauce for dinner then took Homie for a walk before Kieran returned home from work. I found Kieran in the kitchen doing dishes by the time I got home from the dog park.

As I peeled off my winter layers and hung up my jacket, I asked him if he enjoyed dinner. Kieran looked at me, considered me for a moment, then said, God damn woman, 50 times God damn. *Gosh dang for all my religious readers out there.

You may recall I determine how good a recipe is depending on how many G bombs Kieran gives me. He will sit and stare lovingly at his plate while he eats dinner. He’ll take a bite, close his eyes, and inhale deeply through his nose while he chews. Once he’s finished swallowing he’ll exhale, look over at me, and drop G bombs. It’s a sign of endearment in our house.

Kieran said the following morning, man baby, that dinner was really good.

Ladies and gentlemen, there’s proof this recipe is a total winner!

The Tortellini with Roasted Tomato Vodka Sauce recipe takes a little while to make but it’s extremely easy. The robust flavor of the tomato sauce is worth the effort and time, trust me! Your oven does the majority of the work for you. You simply cut some veggies in half, season them with olive oil, salt, and pepper, roast them, and you’re more than halfway to dinner!

If you have the time, simmer the vodka sauce longer than the recipe calls for. I stated 20 minutes in the recipe which will get the job done. But I personally simmered the sauce for an hour and a half. During that time I washed prep dishes, cleaned up the kitchen, and made the pasta. By the time I finished cooking the recipe I had two pots left to wash and a clean kitchen.

I really loved the addition of tortellini but you can use penne pasta or whatever kind of pasta you like best. I felt the tortellini and burrata cheese paired wonderfully together. And who in their right mind doesn’t like cheese filled pasta topped with additional cheese?

I’m not going to lie, I think this is the most flavorful pasta dinner I’ve ever come up with. Roasted vegetables are so sweetly delicious and the burrata cheese is irresistibly creamy and salty. The bacon and vodka add depth of flavor that’s to die for!

I know it’s technically “Christmas Cookie Season” but I needed a break from all the sweet stuff. I don’t know about you, but I crave savory dishes this time of year too. Plus, you can’t survive on cookies, or buttered rum pretzel bark, for every meal, you need amazing recipes that provide a proper amount of subsistence. During the month of December, I’ll be bouncing back and forth from holiday sweets to everyday savory recipes. I have some more yummies on the docket!

  • 5-7 in tomatoes cut in half (I used tomatoes on the vine)
  • 1 white onion roughly chopped
  • 3 garlic cloves whole
  • Healthy drizzle of olive oil
  • Healthy sprinkle of salt and pepper
  • 4 pieces of bacon diced
  • 1/2 cup of vodka I used Skyy
  • 2 teaspoons of sugar I used cane sugar
  • 14 oz tortellini I used DaVinci multicolor tortellini
  • Burrata cheese I ball per serving
  • Fresh basil for garnish

Instructions
  1. Pre-heat your oven to 400 degrees and line a cookie sheet with parchment paper or tin foil.
  2. Place the halved tomatoes, the whole garlic, and the chopped onion on the cookie sheet. Generously drizzle the vegetables with olive oil then season the veggies with salt and pepper.
  3. Roast the veggies in the oven for 30-50 minutes or until caramelized. My oven is old so it's not as powerful as some. I roasted my vegetables for 50-60 minutes.
  4. Remove the roasted vegetables from the oven. Pour them into a food processor or blender. Blend the roasted vegetables until smooth. Set aside
  5. Cook the diced bacon in a large skillet over medium-high heat until they are crispy, roughly 7-8 minutes. Carefully discard most of the bacon grease but leave approx a tablespoon. You can eyeball it.
  6. Carefully add the vodka and cook until the liquid reduces to half, roughly 5 minutes.
  7. Now add the pureed roasted vegetables and the sugar, stir until everything is well combined. Turn the heat down to low and allow the sauce to simmer for 20 minutes (longer if you have time).
  8. While the sauce is simmering make the tortellini according to the manufactures instructions. Once the pasta is cooked and drained add it to the sauce and stir until all the pasta is coated with the sauce. Taste and adjust the seasonings to your preference. Note, burrata cheese is salty so you may not need additional salt.
  9. Serve the pasta in bowls then top with burrata cheese and fresh basil.
  10. Enjoy!
Recipe Notes

I had some time to kill so I simmered the tomato vodka sauce for an hour and a half. During that time I did all the prep dishes and cleaned up the kitchen. If you don't have that kind of time on your hands, you can cook the bacon and the pasta while the vegetables are roasting.

    You can’t live on cookies alone during the holidays!? What’s wrong with you, Christina?? After that admission, I’m not so certain about your job as an assistant cookie and milk taster. 🙂 Just kidding! Anyone who comes up with a buttered rum bark deserves the job as an assistant cookie and milk taster. Or maybe an assistant to the cookie and milk taster. (Dwight and The Office??) Also, Avoid the Noid. I totally remember that strange character. It made no sense. And then they made a Nintendo game out of it, too. Ah well, I digress. This pasta looks GD good! I mean this is what I’m talking about for amazing comfort food. Somewhere in the back of my brain (hanging out with memories of Noid and Rampage (remember that game?) is the idea to make a vodka sauce from scratch. I love this one, and I think I need to make it happen after the holidays. After all, real cookie and milk tasters live on only cookies during the holiday season. Hah!

      David, I enjoy the crap out of you. You are hilarious. Remind me to reread MY posts before commenting on yours. I love that fact you just called me out on the cookie and milk tasting bit,hahahahaha! YES to Rampage! I’m a bit of a gamer and Rampage was one of my favorites growing up. I look for it any time the hubs and I visit an adult arcade. Speaking of hubs, I’m a bit irked because he snuck into the kitchen and ate the pasta leftovers, without leaving me ANY. It’s all gone 🙁

      Whelp, guess that’s a good excuse to make more 🙂

    This is one of the most inviting pasta dishes I’ve ever seen. That sauce looks so creamy and amazing and those little soft pillows of tortellini — yum! I wish this were my dinner tonight!

    When you simmer this, is it cover off? Does it reduce too much if you simmer for a long time?

      I simmered this recipe with the cover off. My sauce reduced by maybe 1/4 cup and I simmered it for an hour and a half. If you find yours is reducing too quickly, you can always add a splash of stock (veggie or chicken) or even water!

        Thanks for your reply! I made this for our NYE meal with some homemade gnocchi to try to be fancy. It was delicious! I added some italian sausage b/c my husband needs more meat. I thought the bacon flavor came through but wasn’t overpowering. This will definitely be made again!
