Fallchos – Fall Flavored Nachos with Ground Pork, Apples, and Cranberries

fallchos-12 DUDE.  You MUST try my Fallchos – Fall Flavored Nachos with Ground Pork, Apples, and Cranberries.  It’s an excellent appetizer to serve for football parties, Halloween, and Thanksgiving.  Yes, nachos with apples and cranberries sounds disgusting, but trust me, it works.

There are a zillion nacho recipes online.  I wanted to think outside the box and bring you something unique this week.  If you Google “pork and apple nachos” you won’t find a savory nacho recipe.  However, you will find plenty of dessert nachos which feature apples as the base served with caramel sauce.  I was excited I couldn’t find a savory apple nacho recipe in hopes I was the first to attempt it!

I consulted my Flavor Bible to construct my Fallchos.  The book confirmed pork, apples, cranberries, jalapeños, onion, and cheese pair well together.  I thought fuck it, let’s get experimental up in this bitch.

fallchos-11 Side note – I apologize for the lack of posts this month.  I’ve been preoccupied with losing my day job, my in-laws visiting and caring for our new puppy. Kieran’s parents live in Rhode Island so we only see them once, maybe twice, a year.  Therefore, when they’re in town I’d rather focus on spending as much time with them, over blogging about food.  Their visit coincided with the adoption of our first puppy, Homie Barkybottoms.  Homie is a 2 1/2-month-old german shepherd mix. Between visiting with Kieran’s folks and caring for Homie, our schedules were full over the last two weeks.

Gah, Homie is cute AF.  The day after we brought her home Kieran and I taught her how to sit.  So yeah, we’re basically super parents 😉
I grew up with dogs and lived with roommates who owned dogs, I adore them.  I thought about adopting a dog in Chicago but I prefer large dogs and didn’t have enough space in my tiny 800 square foot condo, with no backyard.  We finally own a large house with a decent sized yard, so the timing was right to adopt.  Homie hasn’t seen much of the world yet because she isn’t fully vaccinated.  We have a vet appointment this weekend for another round of shots, soon after that, we can start socializing her with other dogs.  I can’t begin to tell you how excited Kieran and I are to take her hiking and camping!!!

I’ll probably dedicate a blog post to Homie in the near future, prepare yourself for cuteness overload 😀

OK – let’s get back to the Fallchos!

fallchos-14 I struck up a conversation with the checkout guy at our local grocery store.  He asked what I was making while ringing me up.  When I said nachos with pork, apple, and cranberry he crinkled his face and said, “Oh, well, that sounds… different.

I hope I’m not making a horrible mistake, I thought.  BUT, one bite of my Fallchos and all my doubts melted away.  Ground pork nachos with onion, apple, cranberry, jalapeño, and cheese are heavenly.

I glanced at Kieran and asked him what he thought of the Fallchos.  He was too busy shoveling the food in his mouth to answer me!  That’s always a good sign!!!  We dove in, gobbling the Fallchos as fast as we could.

The dish is well rounded and balanced.  The pork is savory, the apples are sweet, the jalapeños are hot, the cranberries are tart, and the cheese and tortilla chips are salty.  In fact, you’ll notice I don’t add additional salt to this recipe since cheese and tortilla chips have enough salt to carry the dish.

Speaking of cheese, if you like brie, try adding some.  Cranberries pair well with brie so your nachos would probably be another success!

I imagine you have upcoming football, Halloween, and Thanksgiving parties to attend or even throw.  Surprise everyone with these unusually delicious nachos!  I hope you give Fallchos a try 😀

Fallchos - Fall Flavored Nachos with Ground Pork, Apples, and Cranberries

Serves: 6-8
 
Ingredients
  • Olive oil
  • 1 lb ground pork
  • 1 small sprig of fresh rosemary
  • Pinch of dried thyme
  • ¾ of a large onion, diced
  • 2-3 jalapeños (use less or more depending on how spicy you like it), cut into rounds
  • 2 different kinds of apples (I used golden delicious for sweetness and granny smith for contrast), chopped into bite-sized chunks
  • 1 cup of dried cranberries
  • 8oz of mild cheddar cheese, shredded
  • 8oz of Colby jack cheese, shredded
  • Large bag of tortilla chips
  • Toppings (optional) - cilantro, parsley, green onion
Instructions
  1. First, preheat your oven to 400 degrees.
  2. Heat a splash of olive oil in an oven-safe skillet over medium-high heat. When the oil is hot, add the pork, rosemary, and thyme. Stir and break apart the pork, into small pieces, until the pork is fully cooked. Transfer the pork to a plate and return the skillet to the heat, adding more oil if necessary.
  3. The next step is to add the onion and jalapeño to the hot skillet. Sweat the vegetables for about 4 minutes, until they start to get soft, then add the apples. Cook the fruit and vegetables for a few more minute, then transfer them to a separate plate. Remember, they will cook for 10 minutes or so in the oven, so the idea is cooking them so they are soft, but not much.
  4. In the same oven-safe skillet, start layering the nachos. First, cover the entire bottom of the skillet with tortillas then cheese. Next add about a ⅓ of the ground pork, followed by about a ⅓ of the apple/onion mixture. Next, sprinkle over some cranberries, then another layer of chips. Keep layering the ingredients like this until the skillet is filled to the top. Finish layering by adding as much cheese as you like.
  5. Transfer the skillet to the oven and cook for about 7-10 minutes, or until the cheese is completely melted. Carefully remove the skillet from the oven and let rest for a few minutes.
  6. Top with cilantro or parsley and dig in!
Notes
I used an oven safe cast iron skillet to make this entire recipe. If you don't have an oven-safe skillet, you can cook the pork and apple/onion mixture in a regular skillet, then layer the nachos on a cookie sheet before transferring to the oven.
