WHOA!  I just learned about the Mars One mission to send humans to colonize the planet Mars by 2024.  I can’t believe there is a current mission to have people live on Mars, within my lifetime, and I’ve been in the dark about it!

Man, I’m obsessed with space.  I actually wanted to make my own video game and the premise was space exploration, but I didn’t have the know how to see it through.

I often watch YouTube videos about space and contemplate life.  When I think of the vast enormity of space, my problems seem mediocre in comparison.

It’s crazy enough privatized companies are trying to land people on Mars, but the chosen astronauts have to stay and live on Mars…..for the rest of their lives!  It’s a one way ticket off Earth.

If you were given the chance for a one-way ticket to Mars would you go?

As much as I love space and long to see the Earth from orbit, leaving Kieran and my family behind is not an option.  I can’t fathom never feeling the sun on my face again, breathing air, and cooking…..OMG I would miss cooking sooooooooo much!

In fact, I’m still dreaming about last night’s dinner!  How can I leave Earth when it harbors beautiful things like Beer and Brown Sugar??!!

Beer and sugar….two of my best friends…..united with my third buddy chicken.  All together, in irresistible ingredient matrimony.

Homer Simpson Drool.  Man, those black little charred bits on the ends are pure flavorful caramelization baby!

This dinner is the easiest thing in the world to make.  Throw the ingredients in a large plastic baggie (or container) mix everything all around, let it marinate in the fridge overnight or all day, then cook it for a few minutes and BOOM, dinner is ready!

I will definitely be making this again!

 

Beer and Brown Sugar Chicken

Ingredients
  • 2 pounds of boneless, skinless, chicken thighs
  • 1-2 bonfire brown beer
  • Half cup brown sugar
  • 2 tablespoons soy sauce
  • ¼ cup rice wine vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh ginger
  • 1 tablespoon salt
Instructions
Marinade:
  1. Cut the chicken thighs into little bit size chunks.
  2. In a large plastic baggie, or large plastic container, add the beer, brown sugar, soy sauce, rice wine vinegar, maple syrup, fresh ginger, and salt. Whisk the marinade until the sugar and salt have dissolved. Now add the chicken thigh chunks. Marinate for at LEAST 8 hours (24 hours is best).
  3. Either preheat your grill (high) or broiler (high heat)
Grill:
  1. Discard the marinade.
  2. Thread the chicken chunks onto BBQ skewers.
  3. Place the skewers on the grill and cook the chicken for 5 minutes. Turn the chicken over and cook until the chicken is done (approx 3-4 minutes). The chicken should register 165 on a meat thermometer. When you cut into the meat, the chicken should be white or very slightly pink.
  4. Pop those little babies in your mouth and enjoy!
Broiler Method:
  1. Ensure your oven rack is 6 inches from the broiler.
  2. Line a cookie sheet with tin foil.
  3. Discard the marinade and spread the chicken out evenly over the cookie sheet.
  4. Put the chicken in the oven and broil for 5-6 minutes. Take the chicken out of the oven, give it a good stir, then return it to the oven for another 3-4 minutes, or until the chicken is cooked through and lightly browned.
  5. Once they are done, pop those babies in your mouth and enjoy!
Notes
I used metal BBQ skewers. If you have wooden skewers be sure to soak them overnight in water before grilling, otherwise they will burn on you!
