Getting sick of camping posts yet? Yeah, me neither. As you’ve probably noticed I’m on a camping kick these days and it’s my pleasure to share the fruits of my camping cooking labor with all of you! I bring you Campfire Beef Burritos! My all-time favorite camping food is anything Mexican. Both Kieran and I loved the Campfire Beef Burritos, they were a huge success!
Quick update before I continue with burrito talk – I’m going to make changes to my food posts going forward. I’m going to make the food posts much shorter and introduce a second post each week that chronicles the fun projects and going-ons of my life. That way, people don’t have to read or scroll through a billion paragraphs before reaching the recipe. I’ll provide more details on my next post.
This post kinda came together by accent. I futzed around with my Android phone instead of shooting pictures with my DSLR camera. I was shocked at how well the food photos turned out. So much, in fact, I decided to use them in this post! And I’m glad I did because the Campfire Beef Burritos turned out amazing!
Kinda like my last camping recipe, Campfire Butter Chicken, the majority of the prep work is done at home. That way, all you have to do at camp is cook and eat. Start by building a campfire and burning the wood until you have a hot bed of coals to cook on. Our fire pit had seen better days, the metal was bent in different directions, but it sure did the trick in producing amazing food!
When the hot coals are ready, place the burritos on them and cook, flipping frequently, for about 10-20 minutes. If you freeze your burritos beforehand, you’ll need 20-30 minutes of cooking time.
Pull a burrito out of the fire periodically to check if it’s heated all the way through. Rewrapped the burrito and put it back on the coals if it’s still cold in the middle.
Top the burritos, once they’re fully cooked, with ingredients of your choice like guacamole, salsa, extra cheese, and extra tomato sauce. You can stop and eat your dinner at this point, but we decided to put the burritos back on the coals for a couple of minutes, unwrapped, to heat up the extra ingredients.
We used camping sporks to eat the burritos but you can eat them by hand if you want. When we finished eating we simply rinsed off the sporks with water and threw away the tin foil. Done. Cleaning up doesn’t get easier than that!
You can customize the ingredients for your taste preferences. Campfire Beef Burritos can be made with chicken, pork, or all vegetables for a vegetarian or vegan meal. For vegans, you can swap out the Mexican style cheese with vegan cheese! I strongly recommend not adding fresh tomatoes or lettuce to the inside of the burrito. They can make the tortilla soggy and gross. Plus, who likes soggy lettuce, BLEH!

- 1/2 onion diced
- 1 red pepper diced
- 1 lb ground beef
- 7 3/4 oz can of Mexican tomato sauce kind of spicy but not too spicy
- 1-2 teaspoons Garlic powder
- 1-2 teaspoons of dried oregano
- 1 cup Refried beans
- 1 cup white rice cooked
- 4 Burrito sized tortillas
- Mexican style cheese shredded
- Additional toppings like salsa guac, sour cream, ect.

- Heat a splash of olive oil in a skillet over medium-high heat. Add the onion and red pepper to the skillet and sweat the vegetables until they begin to soften.
- Add the ground beef, garlic powder, and oregano, and cook until the meat is almost cooked through.
- Add the Mexican tomato sauce. If the sauce is too tomato-y, add a couple pinches of sugar to augment the bitter taste.
- Simmer the meat in the tomato sauce for about 20 minutes. Remove from heat and allow the meat mixture to cool down completely.
- Place a large piece of tin foil on your work surface. Spray the foil with cooking spray.
- Lay a burrito tortilla on the foil then add 1/4 cup refried beans. Carefully spread the beans into an even layer in the center of the tortilla.
- Now add 1/4 cup cooked white rice on top of the beans. Same - spread it around into even layer.
- Now add 1/4 of the meat mixture on top of the rice.
- Top the meat mixture with a good handful of shredded Mexican cheese.
- Roll the tortilla into a burrito shape and wrap it in the tin foil. I wrapped my burritos with another piece of foil to ensure they don't accidentally unwrap in the campfire during the cooking process.
- Do this 3 more times (recipe makes 4 burritos).
- After you wrap each burrito in tin foil, put them in the freezer. When you get ready to leave for your camping trip, throw the frozen burritos into the cooler, on top of your other products.
- Build a fire and burn it down until you get a nice layer of hot coals.
- Gently lay the burritos on top of the coals and cook them for about 20-30 minutes (turning several times throughout the process).
- When the burritos were heated all the way through, I took them out of the fire, opened them up, topped them with salsa, guac, and more cheese, then carefully (without rewrapping them) placed them on top of the coals so the additional ingredients could warm up. Once the burritos are cooked to your liking, pull them from the coals and eat!
Notes: You can add or omit any ingredients your family does or doesn't enjoy. However, refrain from adding fresh tomatoes or lettuce inside the burrito, those ingredients will make the tortilla soggy and gross at camp. Add those items to the top of the burrito after it's cooked.
If you plan on cooking the burritos the first night at camp, you don't have to freeze them beforehand if time doesn't permit. In that case, only cook them for about 10 minutes on the fire.
To ensure the burritos wouldn't get smashed in my cooler, I packed them in a large Tupperware container.
This recipe yields 4 burritos. I brought 2 burritos with us and froze the other 2 for later consumption. I cooked them in a 350-degree oven, for approx 20 minutes, later in the week, after our camping trip.
