Mango Chili Fried Rice

I’m struggling with what I should write about this week.  This is a food blog, so I’ll eventually get to the Mango Chili Fried Rice recipe (which is amazing).  However, after watching the DNC convention, I’m pissed and need to rant.  I swore if I wrote a blog I would be honest about who I am.  Honesty could hurt my readership but if I can’t be myself then I have no business writing you each week.

I rarely discuss politics in my posts, but if you’re curious, I’m a progressive who disdains our 2 party political system.  I was a democrat until Bernie Sanders peeled the curtain back, exposing the fraudulent inner workings of our government.  I watched helplessly as our own government rigged our 2016 presidential election.

Side note, you should make the Mango Chili Fried Rice, it’s tasty AF.

I was a fan of Bernie Sander’s before he entered the race.  I followed him on social media and liked the shit out of his posts.  Alongside millions of people I clamored for him to run for president with Elizabeth Warren as his running mate.  When Hillary announced she was running for president I thought, “OK cool, I’ll vote Bernie but if he loses, Hillary’s OK too.”

Shortly thereafter I researched both candidates and found an alarming difference.  Bernie’s political history isn’t perfect, but he has a consistent record of supporting the middle class.  Hillary has a record of telling the American people what they want to hear, then supporting the financial donors she’s beholden to.  At this juncture the wool was still covering my eyes.  I figured Hillary had carved an impressive political career for herself and did whatever necessary to play the game.  I respected her at this point.

The primary season started so I watched with anticipation to see how Bernie would fare.

Currently our government is bought by the highest donor, which turns my stomach.  Citizen’s United and other dark monies pollute our system so Wall Street (and other big money interests) regulate congress, instead of the other way around.  Getting money out of politics is a major concern of mine.  You can imagine my enthusiasm when Bernie refused to take Super PAC donations during his campaign.

When Bernie announced his presidency I knew he was in for an uphill battle. Our money driven establishment wants business conducted as usual so it’s obvious stopping Bernie from becoming president was top priority. Sadly, I didn’t realize the lengths the establishment would go to kill Bernie’s campaign.

Speaking of campaigns, I’m a strong supporter of this Mango Chili Fried Rice recipe.  You should try it, it earned my vote!

American’s should be concerned how this election was handled and this is why…

The Media Blackout:

Media is suppose to keep the American people abreast of what’s happening in our country.  Instead, our media floods our televisions with fear mongering, gossip, and distortions of the truth.

This election cycle showed how powerful corporate media manipulation can be. The media shunned coverage of Bernie to downplay his campaign’s momentum.  Media outlets who covered Bernie lead their viewers to believe Bernie’s policies were either punitive or too ambitious for the country.  Bernie constantly fought through interviews to get his message out.  The media seemed too eager for Bernie to talk smack about Hillary. If he DID say something negative, the Clinton campaign told Bernie to “tone it down”. I found this funny because Bernie focused on the policy differences between them, he didn’t assassinate her character. When Hillary told Bernie to “tone it down” I thought, “Jesus, if this woman can’t handle Bernie Sander’s she’s NEVER going to beat Trump.”

Amazingly, Bernie made a substantial jump in the polls utilizing social media. I discovered a YouTube channel called The Young Turks (TYT) who covered stories for Bernie when the media wouldn’t.  TYT would show people flocking to Bernie’s rallies by the thousands yet the media wouldn’t make a peep about it. Bernie’s momentum was infectious, and millions of people began feeling the Bern!

How the media treated Bernie Sanders during the primary was concerning.  The corporate media shut Bernie out in favor of Hillary and Trump coverage.  If it wasn’t for social media, the establishment may have successfully blocked Bernie from the public.

The DNC:

The DNC’s role is to organize the Democratic National Convention during an election process and provide support for party candidates.  Hillary received support from the DNC but Bernie did not.

Debbie Wasserman Schultz, the chair of the DNC use to be the co-chair of Hillary’s 2008 campaign. The conflict of interest was glaring, but I gave her the benefit of the doubt. Debbie presented herself as a neutral arbitrator between the Sander’s and Clinton camp, so I believed she was.  Turns out her supposed neutrality was the furthest thing from the truth.

The DNC only scheduled six democrat debates.  Three aired on weekends, competing with other highly televised events, or on holiday’s when people generally don’t watch TV. The DNC purposely minimized Bernie’s exposure to the public but denied it.  PolitiFact called Debbie disingenuous when she defended the debate schedule, saying it actually helped to maximize the candidates exposure.

Debbie dismantled the restrictions Obama introduced in 2008, which banned the DNC from taking money from federal lobbyists and political action committees. Debbie resumed calling lobbyist for donations once the 2008 restrictions were lifted that benefited Hillary alone. The Wikileak email fiasco suggests the DNC helped launder money for Hillary’s campaign. Both Clinton’s campaign and the DNC publicly defended a joint fundraising venture to provide help so State Committees could assist their down-ticket candidates. However Vogel and Arnsdorf of Politico report:

“Between the creation of the victory fund in September and the end of last month, the fund had brought in $142 million, the lion’s share of which — 44 percent — has wound up in the coffers of the DNC ($24.4 million) and Hillary for America ($37.6 million), according to a POLITICO analysis of FEC filings. By comparison, the analysis found that the state parties have kept less than $800,000 of all the cash brought in by the committee — or only 0.56 percent.”

Besides helping finance Hillary’s campaign the emails also show the DNC systematically trying to undermine and sabotage Bernie’s campaign.  Debbie resigned from her position after the emails went public.  Hillary wasted no time giving Debbie a promotion as co-chair to her campaign.

Debbie should have admitted, from the getgo, Bernie was a life long Independent.  She should have argued it wasn’t fair to support someone who suddenly wanted to join the democrat party.  Debbie hinted during one interview her job was to stop grassroots movements, but the next interview said the DNC was completely neutral.  Why not be transparent instead of sneaking around?

How can we trust our elected officials under these circumstances?  If the DNC secretly tipped the scale in favor of another candidate, would Hillary’s supporters be upset?  You’re lying to yourself if you said no.

The Votes: 

No matter who you voted for in the primary, Every Single American should be outraged at the voter irregularities that occurred.

Polling locations were an unorganized mess.  Polling places opened late, some closed early.  Some didn’t have the correct ballots, some ran out of ballots, others had the correct ballots but gave out the wrong ballots.  Millions of new people registered to vote yet hundreds of polling locations were closed.  Thousands of people had to wait in long lines, some 5 hours long, JUST to vote.

Voter’s party affiliations were changed at the last minutes and other voters were completely purged from the system.  Purged voters magically appeared back in the system days after the election.

On some occasions Hillary was awarded more Super Delegates even if Bernie won the state by a larger margin.

Exit polls, a bench mark for catching voter fraud were canceled for numerous states.

The night before the California primary the media prematurely announced Hillary was the official nominee.  The ONLY reason to prematurely announce Hillary as the official nominee is to disenfranchise voters.  It was an ugly move by the media to yet again tip the scales in Hillary’s favor.

Oddly, neither Hillary or Trump supporters suffered from the irregularities, only Bernie supporters.

The primary and caucus structure in our country is a joke.  At present time the American people do not live in a true democracy, which is a sad state of affairs.

Overview:

Our government humored the American people by letting them think they had a choice.  This election proved we don’t live in a true democracy and the establishment didn’t even try to hide it.  I humbly thank Bernie Sanders for fighting for the middle class.  I can’t imagine what his experience was like, fighting the establishment every second of his campaign.  I respect Bernie Sanders for having the balls to do it.  Thank you Bernie, I’m proud of your accomplishments 🙂

What’s Next:

Hillary’s supporters are excited their choice was nominated, I get it and appreciate their enthusiasm.  However if Bernie won the nomination the way Hillary won, I would be utterly disappointed in our country.

I can only ease my disappointment by eating a big bowl of this delicious Mango Chili Fried Rice.

Hillary is our nominee, what now?  I’m strongly against her positions on the TTP and fracking.  Do I think Hillary is good for the middle class?  Not necessarily.  Corporate donors own Hillary Clinton and they want a good return on their investment.  Hillary is riddled with scandals and the FBI confirmed she’s careless.  Will I vote for Hillary?  That’s the million dollar question.

If Hillary won the election fairly, with no secret help from the DNC, or the media, or without the flagrant voter fraud, I would vote for her.  Granted, I would hold my nose while I cast my vote, but it would be a no brainer.

After everything that’s happened, will I vote for Hillary?  The thought leaves a bad taste in my mouth.  Unlike this tasty Mango Chili Fried Rice recipe!

Mango Chili Fried Rice is a fun blend of summertime fruit and a classic indulgence.

After chopping the vegetables and chicken, the recipe comes together very quickly.  The recipe calls for cooked white rice, day old rice is the best. I make the rice for this recipe the day before so it’s ready to go.

The recipe is easily adaptable to be vegan, vegetarian, or gluten free!

Kieran and I enjoyed the Mango Chili Fried Rice and I hope you do to!

Mango Chili Fried Rice

Ingredients
  • Sesame oil
  • 2 eggs.
  • 1 large (2 small) boneless, skinless chicken breasts, cut into cubes seasoned well with salt and pepper.
  • 2 mango, cut into chunks
  • 2-3 garlic cloves, diced
  • 1 tablespoon fresh ginger, minced
  • ½ red onion, diced
  • 1-2 jalapeno (with or without seed), sliced
  • 1 red pepper, diced
  • 2-3 cups cooked white rice
  • 1 tablespoon oyster sauce (optional)
  • 2 tablespoons fish sauce
  • 3 tablespoons soy sauce
  • 3 tablespoons sweet chili sauce
  • Juice from 1 lime
  • Splash of OJ (optional)
  • 1 avocado, diced
  • Mint for garnish
Instructions
  1. In a small bowl whisk together the oyster sauce, fish sauce, soy sauce, sweet chili sauce, lime juice, and OJ. Set aside.
  2. Heat a splash of sesame oil in a large skillet over medium high heat.
  3. Add the two eggs (I scramble them in the pan to avoid dirtying another dish) and cook them to your desired doneness. I like to add a pinch of salt and pepper. Once finished cooking slide the eggs onto a plate. Set aside.
  4. If you pan is dry, add another small splash of sesame oil to the pan. Add the cubed chicken breasts. Sautee until the chicken is fully cooked approx 5 minutes. Remove chicken from the pan and onto the same plate as the eggs. Set aside.
  5. After the chicken is cooked I gage the temperature of my pan before adding the garlic and fresh ginger. It it seems to hot, I'll turn the heat down so the garlic and ginger won't burn.
  6. Add another small splash of sesame oil if need be. Add the garlic and ginger, cook until fragrant, approx 30 seconds, then quickly add the jalapeño, red pepper, and red onion. Sweat the vegetables until they become soft 5-7 minutes.
  7. Once the veggies are soft, add the chicken back to the pan.
  8. Stir in the rice and mix until everything is well combined.
  9. Now add the soy sauce mixture and stir once again. Taste and adjust the flavor to your liking. Add additional soy sauce, sauce, lime juice, ect.
  10. Finally add the mango and eggs, cook until reheated.
  11. Serve in bowls and garnish with avocado and mint. Enjoy!
