Healthier Cookie Dough Truffles

Anyone who has read my desert posts, knows I can’t be trusted around cookie dough.  If I’m making cookies, I normally eat so much dough I have enough batter leftover to bake like…. 4 cookies.  Okay..I’ll stop lying….I can bake like…… 1 cookie.  #ihaveaproblem

Cookie dough is my Achilles Heel.  Each and EVERY time I bake cookies, I promise myself, “This time you’ll practice restraint young lady….THIS time you’ll be good……THIS time you’ll actually BAKE the cookies dammit!”

I chant encouragement to myself as I reach for my mixing bowls.  I whisk the dry ingredients together and set aside….no issues there…so far so good.  Then…it’s time for the wet ingredients.  Once I start mixing the soft butter and sugar I think, “OK….OK…ONE little taste won’t hurt” as I lick a small amount of batter off the spoon.

“Holy fuck that was good!” I think to myself, dunking my spoon back into the batter for a bigger helping “Well, if I AM going to have any batter, I might as well do it before I add the eggs….I’m not crazy…..I don’t want Salmonella poisoning!”

“OMG”, a couple spoonfuls  later, “I HAVE to stop eating the batter…I’ll add the eggs now so I’ll be forced to stop!”, I say to myself with conviction.

You would think I could exhibit self control after adding the eggs…. but no…I fail…  Every.  Single.  Time.  I mean, I’ve been eating cookie dough for 30 plus years and I haven’t gotten Salmonella yet, so why not chance it again?!  I mean #realtalk.

After I add the flour and chocolate chips, I HAVE to taste the batter again.  It’s a matter of principle!  I can’t in good conscience add another ingredient without making sure it tastes good!  What do you think I am????  An animal???

By the time I’m finished sneaking taste after taste I look down at my bowl….and yet again….I hardly have any batter leftover to bake into cookies.

“DAMMIT CHRISTINA!!!”, I scream in my head, “You PROMISED THIS TIME!!!!”

Ugh.  I can’t help but feel an overwhelming sense of guilt.  Once again the call of the cookie dough was too strong.  The powerful, delicious, sweet tasting cookie dough won once again.  Determined, I think to myself, “I promise…NEXT time I’ll be good.”

Disclaimer… my fingers were crossed behind my back….cough.

But guess what dear readers!?  I finally found a solution to my cookie drug dough problem!!!

I’ve made no-bake cookie dough truffles!!!  Now I get the FULL enjoyment of eating raw cookie dough, without all the guilt, because the cookie dough IS the desert!!!!!  Hallelujah, Praise the Lawd!!!

I FINALLY understand it when girls can’t even now!  I can’t EVEN!!!!!  Oh Mer Gerd you guys…this desert is the bomb.com!

Cookie dough truffles are the answers!  To what questions you ask?  ALL of them!  Cookie dough truffles are the answers to ALL life’s questions!

And I have GREAT news!  These cookie dough truffles are a bit healthier for you too!  Instead of flour, butter, and refined sugar, I used almond flour, maple syrup as the sweetener, and coconut oil as the fat.  I also found amazing chocolate chunks called “Enjoy Life Semi-Sweet Chocolate Mega Chunks” which are vegan and gluten free along with Paleo friendly! “Enjoy Life Semi-Sweet Chocolate Mega Chunks” are made with evaporated cane sugar, instead of high fructose corn syrup, which makes me feel loads better when I’m face-planting in a tray of these yummy truffles.  Loads!

I was astounded when I took a bite of the truffle.  I thought for sure the maple syrup and cinnamon would make the truffle taste differently than “chocolate chip” cookie dough, but it’s remarkably close.  So close in fact you will barely notice and you’ll feel better knowing you’re giving your family and friends an “almost” all-natural desert!

Now, if you just rolled your eyes at my last couple of paragraphs, and thought to yourself, “Screw you and your healthier deserts, bring on the flour, butter, and sugar!”  Slow your roll, I have your back.  You can try this recipe instead:

2 cups flour
1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup chocolate chips
1-2 cups additional chocolate chips (or in my case Enjoy Life Semi-Sweet Chocolate Mega Chunks)
Sea salt for sprinkling

Simply follow the same steps I have posted in the recipe below, but swap out for the unhealthier ingredients instead.  I tinkered with this recipe and the healthier recipe below and loved the taste of both!

Kieran doesn’t particularly like sweets, but he’s loves this desert.  This morning I caught Kieran in the kitchen, with a mouth full of truffle.  He gave me a chocolatey smile and said, “Mmmmmm, I like these.”  Trust me guys, even though Kieran can be a man of few words, that was the huge sign I created something Shock Munch worthy!

So if you’re a cookie dough crack addicted lover like me, you’ll REALLY enjoy this sweet, healthier treat.

Healthier Cookie Dough Truffles

Ingredients
  • 2 cups almond flour (often known as almond meal)
  • 6 tablespoons of maple syrup
  • 2-4 tablespoons coconut oil (melted)
  • 1 tablespoon vanilla extract
  • ½ teaspoon of cinnamon
  • ¼ teaspoon of salt
  • ½ cup chocolate chips (optional)
  • 1-2 cups additional chocolate chips
  • Sea Salt (optional)
Instructions
  1. In a medium bowl, stir together the maple syrup, coconut oil, and vanilla extract. Set aside.
  2. In another bowl, whisk together the almond flour, cinnamon, and salt.
  3. Slowly add the flour mixture to the wet mixture. With either your hands or a spatula, continue mixing the ingredients until everything is well combined and forms a dough. If the dough is too crumbly, you can add a teaspoon of water at a time until you reach cookie dough consistency.
  4. Now, gently fold in the ½ cup chocolate chips.
  5. Pinch off approx a tablespoon of the dough and roll between your hands to form a ball. Then gently place the rolled cookie dough balls on a parchment paper lined cookie sheet and set aside.
  6. Melt the additional 1-2 cups of chocolate chips in the microwave or a double boiler.
  7. Working quickly, dunk and coat each cookie dough ball in the chocolate, then carefully place the cookie dough balls back onto the parchment paper.
  8. Once all the balls are coated in chocolate, sprinkle the tops with a little sea salt.
  9. Put the cookie sheet, with the cookie dough balls, into the fridge and chill for 4 hours, up to 24 hours.
  10. Plate the cookie dough truffles on a decorative plate, serve, and enjoy!
Notes
The longer you let the truffle chill, the better it seems to taste.

Since you are dunking the cookie dough bites in chocolate, you can skip adding the ½ cup chocolate chips if you wish, which is why I said they can be optional in the recipe. In fact, if you want to cut calories, you can add the ½ cup chocolate chips, but skip dunking the cookie dough bites in chocolate. Once you form the dough into balls, you can serve them right then and there if you prefer!
