Ummm, it’s like you read my mind here, Christina! I love all things gingerbread, and these cookies might just need to show up in my kitchen…so that they can then promptly disappear. Seriously Shannon, you just made my life. I don’t fancy myself a writer, at all, so your kind words kinda just blew my mind. And thank you so much for the compliments on the cookies and photography. I’ve been struggling with my photography style for a long time. I FINALLY (after 3 years) feel like I’m getting the hang of it, even though I have a LONG way to go. Oh my gosh, Christina! You have the same addiction as I do! Chocolate and ginger! I use them together as often as I can. I’m thinking of redoing a chocolate-gingerbread trifle for Christmas, and you’ve inspired me to make these cookies. Even though I love the PB version, this sounds, dare I say? Even better. Thanks for the recipe and the inspiration! BTW, your photos are gorgeous!

I think gingerbread is my favourite kind of holiday cookie, and the soft, pillowy texture you describe sounds like my kind of cookie. Love the addition of chocolate kisses! And I almost fell over laughing at your description of the overhead shot! You’re too funny Christina! Have a happy holiday!
