I felt exhausted after any activity. If I did dishes – nap. Walk up the stairs – nap. If I took Homie for a walk I needed to sleep it off for 3 hours. I’m a little congested today but my energy level has increased exponentially.
And I don’t know about you all, but when I’m sick I crave cheese. And doesn’t dairy make congestion worse? I thought I read that somewhere. So there you have it, folks, when I’m sick I’m apparently slow on the draw because I crave foods that make me feel worse #winningatlife

Margherita pizza is my all favorite pizza flavor. I mean, fresh tomato, basil, and mozzarella cheese… forget about it, it doesn’t get much better than that! Until of course you up the ante and add fresh burrata cheese on top. If burrata cheese isn’t on your radar yet you are missing out!
If you’ve never tried burrata cheese here’s what you need to do. Stop what you’re doing and go buy some. I mean, sure, you may get fired if you leave your job in the middle of the day to buy cheese but trust me, burrata cheese is worth it. Disclaimer – burrata cheese is not worth getting fired over, but it’s pretty F-bomb close.
According to the Googles Burrata is a fresh Italian buffalo milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture.
Burrata cheese is straight up so soft and creamy it’s like eating a silky cloud of cheesy goodness. Hot damn, it’s sooooooo good.
I made Skillet Margherita Pizza Topped with Burrata Cheese entirely from scratch but you can sub in your favorite store-bought pizza sauce and dough. If you buy store-bought dough and sauce you will save a ton of steps. But, if you like making things from scratch, the pizza will obviously take longer to make but the end result will be amazing.
You’ll notice I included some optional ingredients like the cornmeal mixture and honey. I add a mixture of cornmeal, sugar, and salt to the skillet before adding the dough. The cornmeal adds a nice texture to the bottom of the crust while the sugar and salt add additional flavor. I drizzle the honey over the pizza sauce before adding the cheese. The sweetness of the honey augments the flavor of the sauce.
The pizza dough and sauce recipes will render more dough and sauce that you’ll need to put this bad boy together. You can do a few things. 1. Make two pizzas at the same time – if you have two skillets. 2. Refrigerate the extra ingredients and make another pizza the following week. 3. Freeze the extra ingredients and make another pizza within a month.
