Speaking of great tasting recipe, this dish kinda came together on accident. I had leftover green olives from my Crazy Caprese Eyes that I wanted to use up. I started throwing ingredients into a pot and voila, One Pot Chicken and Green Olive Casserole was born! After one bite I thought, Hot damn! I need to Shock Munch this.
Admittedly, the first go around with this recipe was a disaster. I used bone-in chicken thighs with the skin left on it. I didn’t realize the rice and chicken thighs were both undercooked until I served dinner. Blah!
However, even though I didn’t cook the meal properly, the flavors were amazing. I opted to retest the recipe using ground chicken in an attempt to keep the dish healthier. Also, you would never guess it, when you cook rice properly your recipe tastes better 😛
After monkeying around with different seasonings and a different chicken, I produced a meal both Kieran and I enjoyed tremendously.
If you can’t stand green olives you probably won’t like the taste of this dish. However, Kieran hates green olives and he still consumed this dinner. The green olives give the recipe a nice salty component without being overpowering. Be that as it may, if you hate capers you’ll have to omit them completely otherwise you are screwed.
I personally love the taste of capers. Real talk, I can eat them by the handful. They give the recipe a playful punch of flavor that pairs well with the green olives.
To offset the saltiness, I added a handful of arugula to the recipe as well. As you probably know, arugula tastes peppery. Not only does it balance the saltiness of the dish, it adds a pop of freshness too. Speaking of freshness I threw in some fresh parsley at the end for good measure.
