OK, true confession time. It’s a miracle I was able to take photos of this Creamy Cauliflower Mac and Cheese recipe. I had to fight Kieran off before he ate it all! OK, I’m lying to you. It probably goes without saying but I don’t consider this recipe healthy even though there’s cauliflower in it. Nothing with 16oz of cheese is healthy, no matter what Pinterest tries to tell you. I swear, every time I search for healthy recipes on Pinterest, it shows me food made with gobs and gobs of cheese. However, you lose a decent amount of calories since this recipe uses cauliflower as its base rather than flour, milk, and butter.
Note, when you first blend the cauliflower, onion, milk, and garlic, you’ll probably think the mixture tastes bland. It’s totally cool to add some salt and pepper for flavor but go easy on the salt. You may find the dish tastes perfect after adding the cheese due to its salt content. Once the recipe comes together you can adjust the salt to your liking.
