The cilantro and jalapeno version ended up being my favorite. I loved the spice from the jalapeno and the freshness of the cilantro. However, you can add just about anything you want. I bet this would be amazing with cubed ham, guacamole, diced mushrooms, and tomatoes.
The best feature of this recipe is being able to make the hash browns a day or two ahead of time. When our friends Phoebe and Eric came to town we hosted a boozey breakfast brunch starting at 11 am. I knew the day of the party would be hectic, so I cooked the hash browns, the bacon, and sauteed the onion and red pepper the day before. The morning of the party I assembled the ingredients back into the muffin pan, crack in the eggs and baked. I had the Baked Eggs, Bacon, Hash Brown bites ready to go within 20 minutes. Preparing half the recipe beforehand was a huge time-saver!
