I love Caprese salad. Forget bread, meat, dairy and vegetables, my favorite food groups are tomatoes, cheese, basil, and salt. There’s nothing better than sinking your teeth into a fresh tomato topped with fresh basil and fresh mozzarella cheese. The addition of salt and balsamic vinaigrette take this popular combo to another level.
Summer is sadly on its way out the door, so I like to savor the flavor of summer by eating as many fresh tomatoes as I can. These Adorable Caprese Bites allow you to relish your favorite season, one cute little bit at a time.
Seriously, I can’t get over how cute this appetizer is! Every time I serve Caprese Bites at a party, my guests always say the exact same thing. The appetizer is too cute, too cute to eat! They follow up that statement by immediately popping the Caprese Bite into their mouth. The hors d’oeuvre may look precious but hunger always wins. A word of warning, a Caprese feeding frenzy will start once the first bite is taken. The appetizer will be devoured in a blink of an eye.
Honestly, though, that’s why I love serving this appetizer at parties. Have you ever been up to your eyeballs in leftovers from a party? Sure, everyone loved your taco dip, but you have half a pan of it left? Yeah, leftovers don’t happen with Adorable Caprese Bites. There’s just something about the flavor combination that’s irresistible!
Plus, the size of the appetizer is appealing to those who just want a taste of something. I’ve been to several parties where I wanted a smaller amount of what the host was offering. Of COURSE, I won’t turn down a piece of cake but deep down I only want a bite. OK, so I’m lying to you about the cake bit. I never want a bite of cake, I want to face plant into the whole damn thing. But you get my point.
You can make the Adorable Caprese Bites as large or as little as you want to. I’ve used both cherry and Campari tomatoes in the past. Campari tomatoes are larger than cherry tomatoes but smaller and rounder than plum tomatoes. Campari tomatoes can fit more mozzarella balls and basil, however, they are not always available at grocery stores. So, I like using cherry tomatoes because they are usually always available.
Although this recipe is easy to make, it’s a little time-consuming. Only because it takes awhile to cut and scoop out the guts of the tomato. Cherry tomatoes are tiny so you must be gentle when scooping, otherwise, you’ll split them in half. But trust me, the time spent is worth it. Your family or guests will love these bite-sized snacks.
I want to emphasize how important it is to salt and drain the tomatoes after cutting them. Salt draws out the liquid in tomatoes. If you don’t drain them beforehand, you will treat your guests to a soggy appetizer! I allow my tomatoes to drain for approx 15-20 minutes before stuffing them with basil and mozzarella. You can salt and drain the tomatoes a few hours ahead of time. I typically take advantage of this and run the vacuum or prep another dish before party time.
